Instructions

  1. Clean the squid, remove the soft bones, then wash thoroughly. Fry briefly until half cooked. Lift and drain.
  2. Puree or mash the cayenne pepper, red chili, shallot and garlic.
  3. Saute the ground spices with lemongrass and lime leaves in quite a bit of oil. Cook until fragrant.
  4. Add the petai and squid, add salt and sugar to taste. Cook until the chili is cooked.
