These shrimp and chicken-filled dumplings are delicious on their own with hot broth, or as a side with noodles. Garnish with fried shallots and green onions for extra flavor.

- 1. In a container, mix all the leather ingredients except water. Stir well. 2. Pour water slowly then knead until smooth. Divide into several parts. 3. Take one part of the dough and thin it using a noodle/pasta maker. Roll from thick to thin while dusting with flour. Do this until all the dough is used up. Cut into squares measuring 10x10 cm (yields about 18 pieces of skin). Set aside.
- 1. In a bowl, mix together all the ingredients except the egg whites. Stir well. 2. Test the taste by boiling a small piece of the mixture. Taste and correct the taste by adding spices. Set aside.
- 1. Take a piece of wonton skin. Put 1 tablespoon of filling mixture in the middle. 2. Place egg white adhesive around the edges of the dumplings. Fold it into a triangle shape. Bring the ends together then glue them back together. Do this until all the dough is used up. 3. Boil plenty of water in a pan. Boil the dumplings until cooked and float. Lift and drain.
- 1. In a saucepan, bring the stock to a boil. 2. Saute the ground spices until fragrant. Lift. 3. Add the stir-fried spices to the boiling broth. Season with sugar and salt. Stir well. 4. Add mustard greens and spring onions. Stir well. Cook until the mustard greens are soft. Correct the taste. Turn off the heat.
- 1. Arrange the dumplings in a serving bowl. 2. Add mustard greens and pour over the sauce. 3. Sprinkle with fried onions. 4. Ready to serve.
