- Whisk together ¼ cup all-purpose flour, 1 teaspoon garlic powder, ½ teaspoon salt, and ¼ teaspoon pepper. Dredge 2 boneless skinless chicken breasts cut in half lengthwise in the flour mixture to coat on both sides.
- Drizzle a large skillet with 1 tablespoon neutral cooking oil, and cook the breaded chicken over medium-high heat for 1-2 minutes on each side to brown but not cook through.
- spray a slow cooker with non-stick cooking spray. Place chicken in a single layer in the slow cooker, cover, and cook on LOW for 4 hours. Transfer chicken to a plate and cover.
- Add 6 ounces linguine or thin spaghetti noodles to slow cooker, pour 2 cups chicken broth over the top, cover, and cook on HIGH for 15 minutes. Uncover, stir in 4 tablespoons lemon juice, ½ cup heavy cream, ¼ cup capers, and salt and pepper to taste. Cook another 10 minutes on high.
- Add chicken back to slow cooker until hot throughout. Serve with additional lemon slices and fresh thyme if desired. Enjoy!
