- Boil the papaya flowers with gelugur acid until soft. Drain and discard the cooking water. Rinse the papaya flowers with water. Drain.
- Heat the oil. Saute the garlic and shallots until fragrant.
- Add the chili slices, ginger, lemongrass and lime leaves. Stir well.
- Add shrimp. Stir until it changes color.
- Add papaya flowers. Season with salt and sugar. Stir well.
- Pour enough water then cook until all the spices are absorbed and the water is reduced. Correct the taste. Lift.
- Ready to be served.
