Instructions

  1. Wash the chicken clean, then coat with lime juice and salt to taste.
  2. Leave it for about 15 minutes and wash again.
  3. Saute the ground spices until fragrant and add bay leaves, lemongrass, lime leaves and grated galangal.
  4. Add salt, sugar, pepper and chicken, stir briefly, then add water.
  5. Boil the chicken until tender and the water dries up, cool.
  6. Once cool, heat oil in a frying pan then fry the chicken until brown. Lift and drain.
  7. Also fry all the remaining cooking spices until dry and brownish. Lift and drain.
  8. Serve the fried chicken with fried spices.
  9. Tear the lime leaves before adding to the stir-fry so that the aroma is more fragrant.
