Instructions
- Wash the chicken clean, then coat with lime juice and salt to taste.
- Leave it for about 15 minutes and wash again.
- Saute the ground spices until fragrant and add bay leaves, lemongrass, lime leaves and grated galangal.
- Add salt, sugar, pepper and chicken, stir briefly, then add water.
- Boil the chicken until tender and the water dries up, cool.
- Once cool, heat oil in a frying pan then fry the chicken until brown. Lift and drain.
- Also fry all the remaining cooking spices until dry and brownish. Lift and drain.
- Serve the fried chicken with fried spices.
- Tear the lime leaves before adding to the stir-fry so that the aroma is more fragrant.
