  1. Cut the tofu into small cubes, then soak briefly in enough water with finely chopped garlic and 1 teaspoon of salt.
  2. Fry the tofu until cooked, remove and drain.
  3. Puree the red chilies, cayenne peppers, shallots, garlic, tomatoes and shrimp paste.
  4. Saute ground spices, add salt and sugar according to taste. Cook until the chili sauce is cooked and fragrant. Then add the fried tofu, stir well.
  5. Cook until all the tofu is covered in chili sauce, remove from heat and serve.
  6. For a more delicious taste, white tofu can be replaced with fried Chinese tofu.
