Instructions
- Cut the eggplant into pieces and fry until brown, then place on a serving plate.
- If you use ebi (dried shrimp), you can soak it in hot water for a while, then wash it thoroughly and grind it finely.
- Heat cooking oil in a frying pan, saute ground spices until fragrant. Add dried shrimp, crushed galangal and bay leaves.
- Add water, sugar, salt and chicken stock powder.
- Cook until the water reduces slightly, then pour over the prepared eggplant.
- Serve.
- Eggplant is fried with the skin side up, so that the color of the eggplant skin does not turn brown.
