Instructions

  1. Cut the eggplant into pieces and fry until brown, then place on a serving plate.
  2. If you use ebi (dried shrimp), you can soak it in hot water for a while, then wash it thoroughly and grind it finely.
  3. Heat cooking oil in a frying pan, saute ground spices until fragrant. Add dried shrimp, crushed galangal and bay leaves.
  4. Add water, sugar, salt and chicken stock powder.
  5. Cook until the water reduces slightly, then pour over the prepared eggplant.
  6. Serve.
  7. Eggplant is fried with the skin side up, so that the color of the eggplant skin does not turn brown.
