This popular cake from a while back is now even more delicious and healthy. Leaving grated carrots un-squeezed adds natural sweetness and a moist texture to the cake.

Instructions

  1. Prepare a baking sheet, spread margarine, and line it with parchment paper.
  2. In a bowl, beat with a mixer the eggs, powdered sugar and palm sugar until thick and fluffy.
  3. Add (while sifting) the flour, baking powder, baking soda, and ground cinnamon.
  4. Beat with a mixer on medium speed until smooth.
  5. Add grated carrots. Stir with a spatula until smooth.
  6. Pour in vegetable oil. Stir until evenly mixed and make sure no oil settles.
  7. Pour the mixture into the pan. Bake in the oven at 180°C for 30-40 minutes. Remove and wait until it cools.
  8. Remove the cake from the pan. Top with buttercream spread. Cut into pieces according to taste. Arrange carrot-shaped decorations from the foundant on each piece.
  9. Ready to be served.
  10. 1. Use imported carrots so they taste sweeter. 2. Don't squeeze the water from the grated carrot so that the vitamins are not lost and the cake remains moist (soft).
