  1. Heat oil in a large saute pan over medium-high heat. Add the ground turkey and saute until completely browned, about 6-8 minutes, using a spoon to stir and break up the meet as it cooks. Drain the cooked turkey of any excess liquid, then transfer the turkey to the pot of a slow cooker.
  2. Add all of the remaining ingredients (minus the toppings), and stir to combine. Cook on low for 6-8 hours, or on high for 3-4 hours, until the soup is cooked through.
  3. Serve warm, garnished with optional toppings if desired.
