This Lamongan-style mixed tofu dish offers a savory and refreshing flavor, thanks to the combination of petis (shrimp paste) and a rich beef broth. You can easily recreate this delicious dish at home if you’re not in Lamongan.

- Wash the meat and put it in boiling water. Boil until cooked and tender.
- After the meat is cooked, take the meat from the boiling water and cut it into small pieces. Set aside.
- Heat cooking oil, saute ground spices until fragrant. Add bay leaves, lemongrass leaves, lime leaves and galangal. Stir well.
- Add the meat that has been cut into small pieces. Stir until smooth and let the spices absorb into the meat.
- Transfer the spices to the pot where you boiled the meat. Add brown sugar, salt and beef stock. Cook until the meat is soft, about 30 minutes. Check the taste if it is right, turn off the heat.
- For cassava cakes, wash the cassava and grate it. Add the sliced spring onions and ground spices (shallots, garlic, coriander and red chilies) as well as additional salt. Stir until smooth then shape into an oval, do this until finished. Fry over medium heat and lots of oil until golden brown, drain and slice.
- For ground chilies, boil red chilies and cayenne peppers. Then puree with additional water and salt.
- For yellow noodles, boil a little water. Then blanch the yellow noodles for about 2 minutes, drain.
- For tofu, fry until the skin is browned then slice according to taste.
- For bean sprouts, also blanch for 2 minutes in boiling water, drain.
- Solution: Take 1 tsp of petis, pour in 1 ladle of boiling sauce then stir until the petis dissolves. Add the noodles, sliced cassava cakes, fried tofu, lettuce and bean sprouts then cover with the sauce. Sprinkle with fried onions and add ground chilies, ready to serve.
- 1. When boiling meat, if it is not yet soft but the water has reduced, you can add more water as needed. 2. Use good quality petis to produce a more savory and delicious sauce.
