Resep Tulang Jambal Cabe
Even fish bones from salted breadfish are used in this recipe – don’t expect perfectly clean bones without any meat attached. We select bones with leftover meat still clinging to them so they fully absorb the sambal when cooked.

Instructions
- Soak the jambal roti bones in hot water for approximately 20 minutes. Lift and drain.
- Heat some oil. Saute garlic, shallots, lemongrass and galangal until fragrant.
- Add large, curly green chilies and fat chilies. Stir well.
- Add jambal bones. Stir briefly.
- Pour in water and add salt and granulated sugar. Stir well.
- Add chopped tomatoes and basil. Stir well and cook over medium heat until the water reduces. Lift.
- Ready to be served.
- Gendot chilies can be replaced with red cayenne peppers.
