  1. Wash and drain the anchovies.
  2. Fry the anchovies until dry. Set aside.
  3. Fry bird's eye chilies, curly chilies, large chilies, tomatoes, shallots and garlic until wilted. Lift.
  4. Blend all the fried ingredients together with the ginger. Add a pinch of salt.
  5. Saute the chili ingredients again until they change color. Just before lifting, add the anchovies and fried onions, stir well.
  6. Ready to be served.
