Resep Ogura Cake Zebra
Despite using the same batter mixing technique as chiffon cake, ogura cake differs in its baking method. It’s baked using the “water bath” technique, where the cake pan is surrounded by a container of hot water.

- Dough A: In a bowl, form a mountain of wheat flour. Make a hole in the middle, then add all the liquid ingredients (egg yolks, eggs, cooking oil, instant coconut milk). Mix well until smooth using a whisk or mixing tool. Set aside.
- Dough B: In a bowl, beat the egg whites with the cream of tartar until they start to foam. Add granulated sugar in 3 stages, while continuing to beat until soft peaks form.
- Add mixture B into mixture A gradually 3-4 times, while continuing to stir with a spatula. Divide the dough into 2.
- Take 1 part of the dough and mix it with chocolate paste. Stir well.
- Prepare a baking dish with a diameter of 22-24 cm. Pour the white and chocolate mixture alternately little by little to form a zebra pattern.
- Take a baking pan larger than the cake pan. Fill ¼ of the way with water. Place the cake pan into it.
- Bake the cake (in a stack of pans) at 170°C for 50 minutes. Take it out.
- Ready to be served.
- 1. Use fresh eggs. 2. Do not open the oven lid during the baking process. 3. After the cake is cooked and out of the oven. Immediately turn the cake over onto the cooling rack so that the pattern is 'imprinted'.
