1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Give it a few seconds to make sure everything is well distributed before moving on.
2. Create a well in the center of the dry mix and pour in the milk, melted butter (cooled slightly), vanilla extract, and egg. Begin whisking from the center outwards to incorporate the wet and dry gradually.
3. Continue whisking just until no dry flour remains. The batter should be thick and creamy, with a few small lumps. Overmixing can make the Paffles dense, so stop once it’s mostly smooth.
4. Let the mixture sit at room temperature for about 5–10 minutes. This gives the leavening agents time to activate and helps the batter relax for extra fluffiness.
