  1. Cut tempeh according to taste, then fry half cooked. Set aside.
  2. Take the bitter gourd that has been cut according to taste and the seeds removed.
  3. Sprinkle with salt, squeeze until the bitter melon wilts and is no longer hard.
  4. Wash the bitter gourd until there is no more salt left.
  5. Heat cooking oil, saute the shallots and garlic until fragrant. Add the cayenne pepper, galangal and shrimp, wait until the shrimp change color.
  6. Add the bitter melon and tempeh, stir until evenly mixed.
  7. Add oyster sauce water and salt until it boils and the bitter melon wilts. Check the taste if it is right, turn off the heat.
  8. 1. Wash the bitter melon after squeezing it so that the salt doesn't stick to it and cause the dish to become salty. 2. Cook over high heat so that the bitter melon remains fresh green.
