  1. Wash the jambal clean. Soak the jambal in hot/warm water for 20 minutes until soft. Remove the jambal, drain, then cut into cubes. Fry jambal in hot oil. Lift and drain. Set aside.
  2. In a frying pan, heat 3 tbsp oil. Saute all the spices with lemongrass, galangal and bay leaves until fragrant and wilted.
  3. Add oyster sauce and water. Stir well and cook until boiling.
  4. Add the fried jambal fish and whole bird's eye chilies. Stir well.
  5. Add salt (optional) and brown sugar. Stir well. Check the taste then continue cooking until the sauce is finished and the spices are absorbed. Lift. Set aside.
  6. 1. Choose jambal roti that is clean, light in color, has thick but soft flesh, and is not hard. 2. Adding salt is optional. If the jambal tastes salty, you can skip the salt.
