Besides just dipping in peanut sauce, cilok (a local specialty) is delicious served in a savory broth, especially when filled with minced chicken – it’s more than just a snack!

Instructions
- Gravy: In a saucepan, boil all the sauce ingredients over low heat until it boils. Check the taste then turn off the heat. Set aside.
- Filling: In a container, combine all the filling ingredients and stir until smooth. Set aside.
- In a bowl, mix the flour, sago and spring onions. Stir well. Set aside.
- In a pan, boil the stock with garlic, ebi, salt, sugar and pepper until it boils. Turn off the heat.
- Put the flour mixture into the stewpan. Stir quickly until evenly mixed. Turn the heat back on to low while continuing to stir the mixture. When the dough is smooth and can be formed, then turn off the heat and let it warm.
- Take a little dough then flatten it in the palm of your hand. Fill it with chicken and roll it up. Do this until the dough runs out.
- In a saucepan, bring plenty of water to a boil. Boil the cilok until it floats and continue boiling for 10 minutes. Lift and drain.
- Ready to be served with a splash of broth.
- The broth can be made a day in advance and stored in the refrigerator.
