Resep Chiffon Cake Pandan
This recipe is for a very light chiffon cake, made with flour, sugar, oil, and baking powder, and it involves creating both a flour batter and a meringue (whipped egg whites) which are then combined.

Instructions
- Original Pandan Extract: Blend pandan leaves and water. Then strain and discard the dregs. Leave and store for at least 1 day in the refrigerator. Separate the clear water. Take the sediment to make real pandan extract.
- Preheat the oven to 160°C.
- Egg Yolk Dough: In a bowl, stir the egg yolks and caster sugar with a balloon whisk until thick and slightly pale. Add thick coconut milk, pandan extract, canola oil, stir well. Add the flour while sifting. Stir gently until smooth with a whisk. Set aside.
- Egg White Dough: In another bowl, beat the egg whites and salt until frothy. Add the caster sugar in 3 stages. Mix the mixture again at high speed until the mixture is shiny and starting to stiffen. Turn off the mixer.
- Add the egg white mixture to the egg yolk mixture in 3 stages. Stir again with a spatula until it becomes a homogeneous dough.
- Pour the mixture into a 20 cm chiffon tin. Previously, there was no need to grease the baking pan with anything. Gently tap the pan to remove excess air.
- Place in the oven then bake until cooked for 50 minutes. Also adjust it to your respective oven.
- Remove the cake from the oven then immediately turn the baking sheet upside down, so that the cake doesn't deflate/shrink/fall. Leave it to cool.
- Remove the cake with a sharp, thin knife. Comb/slice the edges thinly. Cut into pieces according to taste.
- Ready to be served.
- 1. Choose fresh eggs so that the cake rises perfectly even without additional ingredients such as baking powder/cream of tartar. 2. Pay attention to mixing the egg white and egg yolk mixture. Stir using the back and forth technique slowly so that the mixture is not runny. This liquid dough can cause the cake to not rise completely. 3.
