Frito Pie Casserole
Frito pie casserole is the large scale, crowd-friendly version of walking tacos; seasoned taco meat with beans topped with melted cheese and crunchy corn chips. If you want to make it a meal in one, top as you would a taco with lettuce, tomatoes, peppers, onions, and cilantro!

- In a large skillet over medium-high heat, cook and crumble the ground beef. Sprinkle with taco seasoning as it cooks. When the meat has been browned, add the beans and stir to combine.
- Preheat the oven to 350°F. Pour half the Fritos into an 8-inch baking dish. Sprinkle with about 2 cups of cheese and top with the beef and bean mixture. Top with the remaining cheese. Bake for 15-18 minutes, until the cheese has melted.
- Remove from the oven and serve, topped with the remaining Fritos, and whichever other toppings you like best.
