Mangkuk cakes are a timeless traditional snack, known for their vibrant colors and a distinctive, soft, slightly chewy texture with a fermented flavor similar to young coconut.

Instructions
- In a saucepan, heat coconut milk, water, granulated sugar and pandan leaves over low heat. Keep stirring until it boils and the sugar dissolves. Turn off the heat and let it cool.
- In a bowl, mix and sift the rice flour, wheat flour and salt.
- Slowly pour the coconut milk solution into the flour mixture, while continuing to stir with a whisk.
- Add instant yeast. Stir well until dissolved.
- Divide the dough into 3 parts. One part is colored green, one part is colored red, and one part is left white. Stir well. Cover with a clean cloth and rest the dough for 2 hours.
- Heat a steaming pan/coaster. Wrap the pot lid with a clean rag. Make sure the water in the pan is boiling and steamy.
- Pour the mixture into the cupcake mold until it is full.
- Steam the cake over high heat for 15 minutes until cooked and bloomed. Turn off the heat and remove the cake.
- Ready to be served.
- 1. Make sure to keep stirring when heating the coconut milk, water and sugar solution so that the coconut milk doesn't break. 2. The coconut milk solution must be mixed with flour when it is warm (not when it is still hot or cold), so that the yeast can work optimally. 3. Make sure the steamer/cooker is really hot when you start steaming the cake. Apart from that, don't open the lid of the pan until the cake is cooked so that the cake can bloom optimally. 4.
