Instructions

  1. Preheat the oven to 350°F. Line baking sheets with parchment paper or silpat mats (or leave them ungreased).
  2. In a large bowl, use a hand mixer at medium speed to combine the sugar, butter, egg and vanilla. Scrape the bowl often while mixing, until creamy.
  3. In a medium bowl, whisk together the flour, baking powder and baking soda. Add the flour mixture to the wet ingredients and beat until well mixed. Stir in the toffee bits by hand.
  4. Shape the dough into 1-inch balls. Roll the balls in sugar. Place them 2-inches apart onto the prepared baking sheets. Flatten each with the bottom of a glass to 1½-inch circles (if the glass sticks, moisten it and dip it in sugar).
  5. Bake the cookies for 9 to 11 minutes or until the edges are just lightly browned. Do not over bake. Sprinkle with additional sugar while warm. Cool completely.
