  1. Grate the peeled potatoes into a bowl. Rinse and drain the grated potatoes, then combine them with the grated onion and egg. Season with salt and black pepper.
  2. Whisk the mixture together. Sift in the all-purpose flour and stir until well combined.
  3. Heat a skillet with oil over medium-high heat. Drop about two tablespoons of the potato mixture into the skillet and flatten it with the back of a spoon. Fry each side of the potato pancake for about 5 minutes or until golden brown.
  4. Transfer the potato pancakes to a plate lined with paper towels. Serve warm with sour cream on the side, and garnish with freshly chopped parsley.
