  1. Preheat the oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  2. Add 4 cups old-fashioned oats, 1 cup sliced almonds, 1 cups shelled pumpkin seeds, ½ cup shredded coconut, 2 tablespoons ground cinnamon, and 1 teaspoon salt to a medium bowl and mix until combined.
  3. Add ½ cup olive oil, ½ cup maple syrup, and ¼ cup peanut butter to a small bowl and whisk to combine. Pour over the oat mixture and mix until evenly incorporated.
  4. Spread the granola evenly on the baking sheet. Bake for 20-25 minutes until golden brown, stirring it halfway through the baking time.
  5. Remove the granola from the oven and let it cool completely before breaking it up and stirring in ½ cup dried cranberries.
