Good Old Fashioned Pancakes

  1. In a large bowl, melt 8 tablespoons butter. Let cool slightly. Stir in milk.
  2. In a separate small bowl, add the egg whites and set aside.
  3. Add the yolks to the bowl with the milk and butter. Whisk thoroughly.
  4. In another medium bowl, whisk together flour, sugar, salt, baking powder. Add this mixture to the bowl with the butter. Stir until barely combined.
  5. In the separate small bowl, beat the egg whites until frothy. Fold into the batter. Don't over mix.
  6. Heat a lightly buttered griddle or frying pan over medium heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Flip when the bubbles on the top start to pop. Brown on both sides and serve hot.
