Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Add the rice to a medium saucepan with 2 cups of water and bring to a boil. Reduce heat to low, cover, and cook until rice is tender and water is absorbed, about 18 to 20 minutes.
  3. In a small bowl, combine rice vinegar, sugar, and salt. Stir to dissolve and add to the rice. Stir to combine and let the rice cool slightly.
  4. Divide the rice over four bowls. Top with crab meat, cucumber, avocado, and nori. Drizzle with spicy mayo and sprinkle with sesame seeds. Serve with pickled ginger if desired.
