  1. Toast rice flour with 1 pandan leaf until the flour feels light, remove from heat and let cool. Discard the pandan leaves.
  2. Roast the grated coconut until dry and brownish, then mash it finely or grind it with a chopper.
  3. Mix roasted rice flour, grated coconut, baking powder, baking soda, stir well. Set aside.
  4. In a container, mix margarine, granulated sugar and brown sugar, beat using a mixer until evenly mixed. Add the eggs one by one, beat until slightly fluffy and thickened.
  5. Add the flour mixture to the beaten egg and sugar, stir well using a spatula until the dough can be rolled into a dough texture.
  6. Take a teaspoon of mixture, then round it. Arrange them at a distance on a baking sheet that has been lined with baking paper and smeared with a thin layer of margarine.
  7. Bake at 160°C until cooked, 30 minutes.
  8. Once cooked, cool and store in an airtight jar.
