- Toast rice flour with 1 pandan leaf until the flour feels light, remove from heat and let cool. Discard the pandan leaves.
- Roast the grated coconut until dry and brownish, then mash it finely or grind it with a chopper.
- Mix roasted rice flour, grated coconut, baking powder, baking soda, stir well. Set aside.
- In a container, mix margarine, granulated sugar and brown sugar, beat using a mixer until evenly mixed. Add the eggs one by one, beat until slightly fluffy and thickened.
- Add the flour mixture to the beaten egg and sugar, stir well using a spatula until the dough can be rolled into a dough texture.
- Take a teaspoon of mixture, then round it. Arrange them at a distance on a baking sheet that has been lined with baking paper and smeared with a thin layer of margarine.
- Bake at 160°C until cooked, 30 minutes.
- Once cooked, cool and store in an airtight jar.
