- Wash the lungs clean then rinse with lime juice. Leave it for 15 minutes. Wash again until clean. Set aside.
- Heat some oil. Saute ground spices with bay leaves, lime leaves and lemongrass until fragrant.
- Enter the lungs. Stir well.
- Pour in the coconut milk and add the grated coconut. Stir well.
- Season with salt and sugar. Stir well then cook over low heat until the coconut milk has reduced and the lungs are soft. Turn off the heat.
- Heat the oil. Just fry the lungs for a while. Lift and drain.
- Ready to be served.
- 1. Choose a part of beef lung that doesn't have veins so it will be softer when cooked. 2. To save time, beef lungs can also be boiled with spices using a pressure cooker.
