  1. Remove the moisture of 2 cups grated zucchini by placing in a colander and pressing a paper towel on top.
  2. In a medium sized bowl add the zucchini, 2 beaten large eggs, ½ cup all-purpose flour, ½ cup grated parmesan cheese, ½ cup shredded cheddar cheese, ¼ cup shredded mozzarella cheese, 1 teaspoon Italian seasoning, salt and pepper to taste and combine.
  3. Heat a large skillet to medium high heat and add 2 tablespoons vegetable oil to the pan. Drop about 1/4 cup zucchini batter into the skillet. Let it cook about 2-3 minutes until it turns golden brown and flip.
  4. Top the fritters with sour cream for garnish and chopped chives for garnish if desired.
